  • 1 poblano chile, diced about 1 cup
  • 1/2 cup freshly chopped cilantro leaves
  • 1 tablespoon fresh lime juice
  • 1 cup shredded sharp cheddar or Monterey Jack cheese
  • 1/2 cup finely chopped green onions scallions
  • Salt and freshly cracked black pepper, to taste
