Ingredients
  

For the Cake:
  • 4 tablespoons unsalted butter 57 g, softened
  • 3/4 cup granulated sugar 162 g
  • 2 large eggs room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup brewed strong black coffee 118 ml, cooled
  • 1/3 cup full-fat sour cream 80 g
  • 1 2/3 cups plain all-purpose flour 215 g
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon orange zest
For the Crumb Topping:
  • 4 tablespoons cold unsalted butter 57 g, cut into small cubes
  • 1/2 cup plain all-purpose flour 63 g
  • 1/4 cup granulated sugar 50 g
  • 2 tablespoons packed light brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1 1/2 teaspoons instant espresso powder
  • 1 teaspoon finely chopped dark chocolate
For the Swirl:
  • 1/3 cup packed brown sugar 75 g
  • 1 teaspoon espresso powder
For the Glaze:
  • 1 1/4 cups powdered sugar 145 g
  • 2 tablespoons brewed black coffee or milk
  • 1/2 teaspoon espresso powder or more to taste
  • 1/8 teaspoon pure vanilla extract

Method
 

Step 1: Preheat Your Oven
  1. Begin by preheating your oven to 350°F (175°C). This is an essential step that ensures an even baking temperature. Grease a 9-inch round cake pan, or line it with parchment paper for easy release later.
Step 2: Mix the Dry Ingredients
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside. This prevents clumping and ensures that your leavening agent is evenly distributed.
Step 3: Cream the Butter and Sugar
  1. In a large mixing bowl, beat the softened butter and sugar together until the mixture is light and fluffy. This typically takes about 3-4 minutes with an electric mixer. The air incorporated during this process helps create a tender cake.
Step 4: Add Eggs and Vanilla
  1. Next, add the eggs one at a time, beating well after each addition. Pour in the vanilla extract and mix until combined. The batter should look smooth and creamy.
Step 5: Incorporate Coffee and Sour Cream
  1. Pour in the cooled brewed coffee and sour cream into the butter mixture. Mix on low speed until just combined.
Step 6: Add Dry Ingredients
  1. Gradually add the dry ingredients to the wet mixture. Stir carefully using a spatula or wooden spoon just until combined. Avoid over-mixing, as this can lead to a tough cake.
Step 7: Prepare the Crumb Topping
  1. In a separate bowl, combine the cold butter cubes, flour, granulated sugar, brown sugar, cinnamon, espresso powder, and dark chocolate. Use a fork or your fingers to mix until crumbly. It should look like coarse sand.
Step 8: Assemble the Cake
  1. Spoon half of the batter into your prepared cake pan. Spread it evenly across the bottom. Sprinkle half of the crumb topping over the batter. For an added surprise, mix the brown sugar with espresso powder, and sprinkle that as well. Finally, pour the remaining batter on top balanced by a layer of crumb topping.
Step 9: Bake
  1. Bake the cake in your preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean. It’ll puff up beautifully, with a golden-brown top.
Step 10: Prepare the Glaze
  1. While the cake is cooling, combine powdered sugar, brewed coffee or milk, espresso powder, and vanilla extract in a small bowl. Whisk until smooth. Adjust with more liquid if you like a thinner glaze.
Step 11: Cool and Drizzle
  1. Once the cake is cool, remove it from the pan and drizzle the glaze over the top, letting it cascade down the sides. This is where it gets visually enticing!
