Ingredients

  • 1 1/2 cups grated sharp cheddar cheese
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 tablespoon baking powder
  • 3 large eggs, separated
  • 6 tablespoons unsalted butter, melted and cooled slightly
  • 1 tablespoon fresh chives, finely chopped
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/3 cup rice flour
  • 1/2 teaspoon cayenne pepper
  • 1 1/2 cups buttermilk
  • 1 teaspoon onion powder

Method

Step 1: Preheat the Waffle Iron
  1. Before you start mixing ingredients, preheat your waffle iron according to the manufacturer’s instructions. A hot iron means crispy waffles, and nobody likes a soggy bottom!
Step 2: Prepare Dry Ingredients
  1. In a large bowl, combine the all-purpose flour, rice flour, baking powder, salt, smoked paprika, cayenne pepper, and onion powder.
Give it a good whisk to ensure all ingredients are evenly distributed. This step is fundamental; it helps the baking powder activate properly and allows for even cooking.
Step 3: Mix Wet Ingredients
  1. In another bowl, whisk together the egg yolks, melted butter, and buttermilk until fully blended. This mixture should be smooth and well combined.
Step 4: Combine Wet and Dry Ingredients
  1. Pour the wet mixture into the dry ingredients. Use a spatula or wooden spoon to mix gently. You want to combine them without overmixing. A few lumps are okay—that will help keep the waffles tender.
Step 5: Whip the Egg Whites
  1. In a separate bowl, beat the egg whites until stiff peaks form. This is the secret to fluffy waffles. Once they are ready, gently fold them into the batter. Be careful not to deflate the egg whites; fold until just incorporated.
Step 6: Add Cheese and Chives
  1. Now, fold in the grated cheddar cheese and chopped chives. Make sure they are evenly distributed in the batter. The cheese should be mixed in gently so it’s spread throughout the waffles.
Step 7: Cook the Waffles
  1. Spray your waffle iron lightly with cooking spray or brush with a bit of melted butter. Pour the batter into the iron, ensuring not to overfill it. Cook according to the waffle iron’s instructions, usually about 5 minutes or until golden brown.
Step 8: Serve and Enjoy!
  1. Once cooked, carefully remove the waffles from the iron. You can keep them warm in a low oven while you cook the remaining batter. Serve your savory cheddar cheese waffles with your choice of toppings, like bacon, avocado, or a drizzle of maple syrup.

Notes

  • Use Fresh Ingredients: Fresh cheese and herbs pack more flavor. Avoid pre-shredded cheese. It often contains anti-caking agents that affect texture.
  • Do Not Overmix: The key to fluffy waffles is not to overmix the batter. This ensures the waffles remain light and airy.
  • Adjust Seasoning: Feel free to adjust the spices to your liking. Want more heat? Add extra cayenne. Looking for a herby flavor? Throw in some dried Italian herbs.
  • Make Ahead: You can prepare the batter ahead of time. Just store it in the refrigerator and stir it again before cooking.
  • Experiment with Toppings: Don’t be afraid to try different toppings. Fresh fruit, various cheeses, or different sauces can all create new flavor experiences.
