  • 1/4 cup unsulfured molasses Wholesome Sweeteners recommended
  • 2/3 cup natural cane sugar sifted
  • 1/2 cup coarse turbinado sugar
  • 1 large egg beaten thoroughly
  • 1 1/2 tablespoons freshly grated ginger
  • 1 teaspoon ground star anise or ground allspice
  • 4 1/2 teaspoons ground ginger
  • 1/2 teaspoon fine sea salt
  • 2 cups spelt flour or whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 cup finely chopped crystallized ginger
  • 2 of Zest lemons
  • 1 teaspoon freshly grated orange zest optional
  • 1/2 teaspoon ground cinnamon optional

Method
 

Step 1: Preheat Your Oven
